    THIS IS A CUSTOM MADE KNIFE.  I'M NOT SURE  WHY THIS KNIFE WAS SPECIALLY GROUND BUT IT IS. IT WAS AT THE FACTORY WITH A LOT OF OTHER BONING KNIVES WHEN I FOUND IT.  THIS IS THE #ST 131S-6 BUT WITH A NARROWER BLADE.  BECAUSE OF THE NARROW AND STIFF BLADE, IT IS THE PERFECT KNIFE FOR TRIMMING AROUND BONES SUCH AS WITH RACKS & RIBS. AND,  (IMHO) WOULD BE GREAT FOR REMOVING SILVERSKIN.
    BECAUSE IT IS CUSTOM-MADE AND GROUND DOWN TO A NARROWER BLADEWIDE THAN THE ST131S-6 NORMALLY HAS,THIS TRULY IS A ONE OF A KIND KNIFE. ***
